Chef Marc A. Wuenschel

Arizona born but Texas bred; Marc Wuenschel grew up and began his culinary career in Texas.  Marc has been in the Chicago market for the past 14 years and was formerly the COO of Restaurants America before becoming Chef/Owner of Hutch American Concepts.

While with Restaurants of America (brands included Bar Louie, Grillroom, Primebar, Park Tavern to list a few) where he was formerly VP of Culinary Operations responsible for planning and designing prospective concepts, “people training”, and opening preparation of new restaurants.

Marc Wuenschel has over 35 years of culinary experience, having held top chef positions with Hard Rock Café’s, Planet Hollywood and the House of Blues. He also has corporate experience with ESPN Zone and Fox Sports Grill. 

In 2013 Marc Developed and Opened Hutch American Bistro – Lakeview, Chicago

Hutch was conceived based on two ideas; people want to be comfortable where they eat and what they eat and drink has to be cravable. Hutch represents just that, a warm and inviting place to truly enjoy yourself and food that is approachable, and most importantly delicious. 

At Bistro, you’ll find a neighborhood restaurant where you can enjoy great cocktails, creative wine list and a menu for everyone. Bistro signature slow cooked baby back ribs, lobster nachos and grilled meatloaf.  Offering Brunch daily 10-3 pm and Dinner nightly at 5 pm. 

Anchoring the warm, intimate space is a bar backed with elegant wood shelves, a nod to the restaurant's rustic, furniture-inspired. Twinkling, wheel-shaped chandeliers shower light onto tables clustered across vintage tile and gleaming hardwood floors. Inviting golden-yellow walls to dominate the interior, while flowerbeds surround a sidewalk cafe.

In 2016 Marc Opened Hutch American Café – River North, Chicago

At Café, you’ll find a neighborhood café where you can enjoy brunch creative cocktails, traditional breakfast items along with Chicken & Waffle, avocado toast, totchos, and nutella dough poppers.  Offering Brunch Weekdays 9-2:30 pm.  Weekends 8-2:30 pm.  This location is also used as an event or party venue for all occasions.   

A very intimate space with a small seated bar.  Bright colorful café with giant edison bulb light fixtures and two “hutch” handing on exposed brick walls. A sidewalk café surround with flowers.

In 2017 Marc Opened Hutch American Kitchen + Bar – Andersonville, Chicago

At Kitchen, you’ll find a neighborhood restaurant where you can enjoy a small but awesome menu items and a great cocktail list.  Along with local Chicago draft beers and a wine list created for everyone to enjoy great wines.  Kitchen signature brisket nachos is a neighborhood favorite, panko crusted chicken, steak au poivre and kitchen bowl.

Intimate dinning space with a long bar for the regular that just want to eat and drink at the bar.  The restaurant's rustic, furniture and wheel-shaped chandeliers shower light onto tables clustered across the dinning room.  Inviting interior with windows across one wall and a oversize “hutch” make this a gorgeous interior, while flowerbeds surround a sidewalk cafe.
